There is truly nothing better than banana pancakes on a Sunday morning. This past weekend I beefed up my banana pancakes recipe. I added a few ingredients to make them even fluffier and delicious. And of course, they are still completely guilt-free - paleo-friendly and dairy and gluten free. YUM! Below is the re-vamped recipe. Here's to making Sundays better one pancake at a time :)
Ingredients for batter:
2 Ripe Bananas
3 Eggs
2 Tablespoons Coconut Flour
1/2 teaspoon Vanilla Extract
Cinnamon to taste
Honey to taste
Instructions: Mash bananas in a bowl. Whisk in all of the remaining ingredients until your batter is smooth. Spoon into a pan (about 3 tablespoons of batter makes one panakes) and cook on low heat. Cook until your pancake is golden brown on each side. Top with fresh fruit and maple syrup!
